White Chocolate Raspberry Pop Tarts


Ingredients:

  • 1 cup frozen raspberries
  • 1 tablespoon sugar
  • 1 tablespoon + 1 teaspoon water
  • 1 teaspoon corn starch
  • 2 tablespoons white chocolate liqueur
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 4 tablespoons cold water
  • 1/4 cup white chocolate chips
  • 1 teaspoon shortening

Directions:

Preheat the oven to 450°F. Lightly grease a baking sheet and set aside (or line with parchment paper… I would have done that, but it turns out I didn’t have any on hand).

In a small sauce pan, combine the frozen raspberries, sugar, and 1 tablespoon of water. Heat over low heat to thaw out raspberries. In a small dish, combine the remaining teaspoon of water and teaspoon of cornstarch, whisking to remove any lumps. Add to the raspberry mixture. Raise the temperature and bring to a boil. Cook for about 1 minute. Remove from heat, and stir in the white chocolate liqueur. Set aside to cool while preparing the dough.

In a medium mixing bowl, combine the flour and salt. Add the chunks of butter and mix with a pastry blender (or your fingers) until the mixture is crumbly. Gradually add one tablespoon of cold water at a time, tossing with the butter and flour mixture. Continue to add water until all of the flour and butter mixture is moistened and a dough forms (approximately 4 tablespoons total). Turn the dough onto a lightly floured surface and roll to 1/8 inch thickness.

Cut the dough into rectangles (I think mine were about 3 inches by 4 inches). Place a heaping tablespoon of the filling in the center of one rectangle of dough. Cover with an additional rectangle, and seal the edges by crimping with a fork. Repeat until all of the dough has been used (I was able to make 6 Pop Tarts).

Arrange the Pop Tarts on the prepared baking sheet, and bake for 7-8 minutes. Allow the Pop Tarts to cool on the pan for a few minutes, and then transfer to wire racks to cool entirely.

Once cooled, place the white chocolate chips and the teaspoon of shortening in a small microwaveable bowl. Microwave at 50% power for 30 seconds at a time until the mixture is smooth and creamy. Drizzle the white chocolate over the cooled Pop Tarts. Allow 5-10 minutes for the white chocolate to harden."

Tomato Fort!

So we have one tomato tree, and every time the tomatoes are ready they have been picked to pieces by birds. So i made it my mission to build out own little tomato fort!


Here is how i started off. a Raised Planter bed that my husband had left over from another project. We willed it with about 14 cubic feet of soil. And added some large mesh about 4' high for the tomatoes to climb on.

This was almost a project for itself. i have never worked with a soaker hose before and those things are pretty stubborn. i laid out the soaker hose and planted the tomato in the middle. again good amount of fertilizer.

all 8 tomato bundles (roughly 5 plants per bundle) are in! and like you can see the irrigation line seemed to work as well.

TA DA! secured and surrounded by some finer mesh to keep all the birds out. Now when you look at the picture of the plants before they seamed a little taller. but i have planted them extra deep into the soil so they grow a stringer root system.

Sick of Excuses!

I am very tired sick of excuses! So my Derby Team has a bout in a couple of days! And like a good supporter i am trying to get all my friend and family to go. I mean even if you have no idea about derby! We all can agree that its a hell of a show to watch. On top of which my team is giving out FREE BEER at our bouts. So like i said i try to get my friends/family to go. And Every Single one of them (Except my Husband and BF)Give me this answer: "I'm only going to come out when you are playing" So my answer is "Well sorry i am on the "B" Team, but its still fun and you should come out to watch. Its cheaper than a movie and more entertaining". But i still get shot down! And its really getting on my last nerve, especially most of them go every other weekend to see our local ice hockey team. "So you are telling me, you rather go to a hockey team where you don't know any of the players than support your friend". At this point i just stop asking them. because i am just tired!

Now on the other hand i have a super great derby sister support system that is always there and loves me for what i am. And trust me i am not judging people because they like or don't like derby! But at least give it a chance, if you don't like it i will be the last one to force you into something you don't want to do. But stop making excuses and give it a try!

So I have never played team-sports as a child or in High School. First time i entered a TEAM was when i joined Roller Derby. That's when i notices how important team work really is. It does not matter if you are the star of the team, what matters is, that if you don't show up for practice you will miss out on the bond that your team builds up over time. Or if you play in 2 - 3 leagues and bout for everyone who wants you on there team, that's just a great way of whoring yourself out. It also means that you don't care about any of those teams and just want to win. Now trust me winning is great, but I rather lose as a team than win as a individual in a Team.

So even thou i am fairly new to Derby and being a member of a Team. All I can say that My Team is an extension of my family. We have our up's and downs, but as long as we stick together we still have family. And i take that any-day over a win!

Twister anyone?

The Heat is on!

Well hopefully soon, I survived my work week and now its time to get mentally and physically ready for tomorrows bout. Been eating healthy all day and hydrating like crazy. Also my inner thigh is pretty sore (not sure at all from what) but i will stretch / and heat it, so I'm ready to go for tomorrow. I am very confident we will win and lets hope no one will get hurt. So I'm off for the weekend with some moist heat and a positive attitude!

Now this Recipe does not tell you is how many rolls it will make. I made 5, and those where some HUGE rolls/loafs! This recipe will make 10 or 12 Rolls easily, this is definitely something i will remember. Also my opinion is to cut same of the cheese in half that goes into the dough and use it for the sprinkling. Its much better that way.

Blogger Frustrations

I also have been trying to post pictures of my new upcoming vegetable garden that is in the making. And it seams like i cant text pictures to blogger or email them. I set everything up but it will not show up in the blog.

I think as soon as i get that problem resolved i will be posting like crazy!

While i am getting in trouble because i spend several hours starting a corset and not finishing it. This might help me with the final finishes on how to finish my master piece!

Been a while

So i like i said i'm still brand spanking new to blogging. I keep thinking is there a way of not putting to much information out there or not enought. When i go onto other peoples helpful DIY blogs i always think "hmm this is not what mine looks like"

But hey baby-steps! Tonight i have Derby Practice! this will be the last practice before my bout this Saturday. Its an Away game and the drive is about 5 hours. i am not looking forward to that one. I do however am very confident that we will beat the crap out of them.

Alrighty i have to go back to work now! Economy is a bitch and i have to be productive to keep my job.
